Karashi
Mustard made from crushed seeds of Brassica juncea, also known as brown mustard.
Shichimi
A common Japanese blend of seven spices. It is also called 'nanami tōgarashi' outside of Japan. Common ingredients include: red chili, mandarin orange peel, sesame seeds, poppy seeds, hemp seeds, nori or aonori, and sanshō.
Ao nori
Sea lettuce. A seaweed used as 'herbs'.
Ponzu
A mix of rice vinegar and citron juice.
Yuzu
A small-sized green lemon (citron).
Miso
Fermented soybean paste. A base used for miso soups. There are many varieties, with different colors and tastes, and regional specialties.
Edamame
Fresh soybean pods.
Gari
A Japanese condiment made from fresh ginger marinated in rice vinegar, water, and sugar. Although naturally light yellow, pink food coloring is often added.
