In the kitchen, traditional Japanese techniques are adhered to, the chef gives his full attention to his ingredients, and occasionally gives full flight to his imagination to allow himself to incorporate any number of genres and essences into his food. The freshest organic vegetables, with earth still clinging to them, are sent in from contracted farmers, seafood comes in from local fishing ports, and meat from healthily reared cattle, pigs and chickens is delivered from selected farms.
