James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

    Met our expectations for a Chef Black concept. Jason was our server and knew his way around the menu selections. Highly recommend the raw bar!

    Dinner New Years Eve. Had a reservation but we were seated in a very small table back by the bar. Seats were uncomfortable and table was too small to fit multiple appetizers on it, their sound system was not working correctly and the music was skipping like and old CD the entire time. Wait staff was great, brought some pillows for backs of chairs to try and help with seating. Food on the other had was AAA. We started with Oysters, Kobe beef and scallops, Burrata appetizers then Sea Bass and Scallop entree which were all excellent and well portioned. To sum it up the food was top notch but the restaurant needs to invest some time and energy into the space to make the dining experience what it should be for the money.

    Overall, this was an incredibly disappointing dinner. The high note was the food, which was good. But the food cannot outweigh how bad of an experience it was. First, we were put in a back room that did not seem like it should be a dining space. The noise from the kitchen and the speakers was too loud for the price point. The service was the problem. I don’t really blame our server. It seemed to be a larger issue. We were supposed to have 2 servers, but one never appeared. It took 10+ minutes for someone to approach our table and another 30 minutes for our drinks to arrive. While we were waiting for our drinks, the table next to us left mid dinner because of how bad their experience currently was. We were debating leaving as well but it was late, and we did not know if we would have been able to get food anywhere else. The manager never came around. He was distributing food at the kitchen. The tables in our section were never cleared when other diners left. This was not worth the price. I mean it was an absolute joke, and makes me extremely skeptical of any of the other Chef Black creations. Save your money and time.

    Perle Mesta Our salads came out before the appetizer without apology. They were fine, but no one bothered asking how they were. Our plates were cleared and then our entrees came. Both my steak and my guests sea bass were overcooked and they didn’t bring fresh silverware before the entrees came, so we sat there and stared at our food for about 10 minutes until the SA brought them to our table bare handed. Our server never came back to check on us after the entrees came, so we decided to eat our overcooked steak and fish because at this point we’d been there for over an hour and were starving. Our server never came back to check on us until it was time to offer dessert. We flagged down a manager and described what our experience had been like, but he didn’t seem to really care. He said he’d give us a “nice discount”, which really turned out to be $12 off of our check. $225 for the worst dinner I’ve had in any city as far back as I can remember, and no one seemed to care. A truly forgettable experience. I definitely will not be back.

    Everything was PERFECT! Wait staff was amazing, food was one of a kind! We had an amazing time!

    Well I really wanted to like this place but after last night that was just not possible. We got seated in the worst table right next to the bar. Our Waiter was consistently slow with our water and drinks. The oysters were small and the Okra well just don't order it. My girlfriend ordered the A5 Waygu and half the cut was fat. To top the night off we ordered chocolate cake to go and they gave us a to go box of someone's pizza. Just massize fails all the way around.

    Not so good, food was excellent, service ok. Going well till a mouse ran across the dinning room. Waiter seemed unconcerned. Probably won’t be back.

    We had dinner for a birthday tonight, and our server was wonderful! Experience, food, and overall atmosphere was amazing! Thank you for the complementary desserts too!!
