The history of IWA 5 sake is tied to the life of Richard Geoffroy, former Dom Pérignon chef de cave who founded the IWA Sake brewery in Japan in 2019 He's known for his blending skills and innovative approach to sake making Geoffroy's appreciation for Japan and its people led him to establish the IWA Sake brewery in Tateyama, Toyama IWA 5 is made using an experimental process that changes every year The sake is a blend of three Japanese rice strains (Yamada Nishiki, Gohyakumangoku, and Omachi) and five yeast strains, including a wine yeast The kura is designed to channel the core principles of IWA: inclusivity, horizontality, and community Geoffroy's goal is to make a sake that is true to Japan, and to contribute to a story that has a centuries long history

We had an amazing time at Miru last night. It has become like our second home. Everyone is so kind and attentive from the host, to the servers and bartenders. Eddie makes the best Mojitos and we always have a great conversation. The Blue fin tuna is the best! We also love the crab maki - delicious!

Dinner at MIRU at the St. Regis was absolutely outstanding! The service was impeccable, the ambiance elegant yet inviting, and the food—truly unforgettable. Every detail made it a night to remember!

Chef’s omakase combination left something to be desired with boring but very fresh fish choices and a tiny spicy tuna roll. Miso black code was delicious. Beautiful restaurant.

Everything was just…fine. Would not recommend to anyone and even if I was staying at the hotel I would probably order out for sushi.

Service is excellent, food is good/solid hotel restaurant food. We got seated in the back darker room, I recommend the front brighter dining area for brunch.
