Dry Aged

These highly sought-after steaks use a 40-day open air process to further the concentration of flavor through a carefully supervised dehydration cycle. This can reduce the overall weight–mostly water–up to 20%, but imbues both a greater tenderness and intensity of beef flavor. Please be aware that the dry aging process alters both the flavor and appearance of a steak; a cut that has gone through this process may look darker or appear over the temperature requested.
