Cardinal is a relaxed fine dining restaurant from chef Tomas Gormley. Located in Edinburghs historic New Town Cardinal offers a modern approach to Scottish cooking.

With a wide range of local and sustainable suppliers at our doorstep, from our Lobsters and Crabs at Belhaven Lobsters in Dunbar to our vegetables and Native breed meats at Free Company Farm in Balerno we’re lucky to be taking advantage of Scotlands unique and unrivalled natural larder.

Cooking over coals helps add an extra layer of flavour to whatever we’re cooking on them, it’s more intuitive and engaging as cooks and we feel like that comes through on the plate.

Tasting menus are our bread and butter but we also offer a pre fixe 'A la carte' menu.

Our full tasting menu is what a fine dining tasting menu means to our kitchen team. The first five snacks come in relatively quick procession and feature flavours and textures that are exciting us right now. Excellent dinner experience in a restaurant that is certainlly on the way to receive a Michelin star anytime soon. The menu is focused on local ingredients and is very crative. The wine pairing had also a couple of nice different surprises and was very well conceived.

I loved everything, but the pastry chef is destined to be a global celebrity. Spectacular.

The ambience was magnificent. The whole team was phenomenal. The food was well thought out, a mixture of sweet, tangy, spicy, that left our taste buds wanting more. The presentation was pristine, and the mix of colours on the plate really took you to another level. I took beautiful photos that I would love to share with everyone so you know just how magical the appearance was of everything that we ate.

Wow. We had the shorter tasting menu and it was spectacular! The lobster, the sea trout, the Baron Bigod cheese on malt bread — I couldn’t decide which I liked the most. Amazing!

Always a pleasure, the pescatarian tasting menu is exceptional. Fantastic ingredients, oyster, tuna, lobster, monkfish to name a few. Beautifully presented with delightful flavours and well thought out accompaniments. Service was good with each course described in just enough detail. Overall a lovely evening, and I would say consistently good as this was our third visit
