Blacklock is a modern version of the Great British chophouse. Set in an old electricity substation on the site of London"s oldest meat market. We take the best meat in the country from the award-winning farmer and butcher Philip Warren in Cornwall. Inspired by yakitori izakayas, Big Night is going to be putting seasonal British-ish produce on sticks and cooking it on our charcoal grill. The food will be simple, loud and fun, perfect to be eaten with a beer in hand and friends at your side.The menu will draw on a variety of influences rather than pretending to adhere to the concept of an authentic cuisine (this is not a Japanese restaurant). Das Barbeque entstammt dem Süden der USA, wo Köche lernten, wie sie die Fleischstücke langsam über Feuerstellen braten, um sie möglichst zart zu machen. Der Rauch des schwelenden Holzes gab dem Fleisch seinen unverwechselbaren, rauchigen Geschmack. Dieser Prozess konnte mehrere Stunden dauern und machte das Fleisch zart und saftig. Der preisgekrönte Smoker wurde aus den USA importiert und so gebaut, dass der Garvorgang dem des ursprünglichen Prozess über den Feuerstellen entspricht. Verwendet wird traditionell amerikanisches Hickory- und Mesquite-Holz, um dem Fleisch seinen vollen Rauchgeschmack zu geben. Das Fleisch verbleibt für bis zu 16 Stunden im Smoker.
