Hinter dem Modus stehen Sam Genkov, Inhaber des 16-jährigen Bravi Ristorante, dem Lieblingsrestaurant des Viertels, und Küchenchef Bruce Woods, ehemals vom Brassaii. Woods ist die luxuriöse italienische Küche nicht fremd. Er arbeitete in den späten 90er Jahren im Il Posto und wurde Küchenchef sowie Mitinhaber des Centro, nachdem er für Marc Thuet übernommen hat. Die Speisekarte des Modus zeigt, dass Woods wieder in seinem Element ist, indem er bekannte italienische Klassiker als Gourmetkreationen neu erfindet.
