Während er im Casa D'Angelo bewiesen hat, mit welcher Professionalität er die italienische Küche beherrscht, wollte er ein Restaurant eröffnen, welches sich mehr wie das einfache Italien anfühlt, das er jedes Jahr besucht und wo die Zutaten im Vordergrund stehen.
