Expect traditional French gourmet dishes at Le Cèdre de Montcaud, and prepare to be surprised by the twists our chef Matthieu Hervé adds to classic receipts. Whenever possible, ingredients are sourced from the immediate vicinity and from the best suppliers. Born and raised in Normandy, Matthieu has a special affection for seafood, this is why you will always find a great deal of fresh fish and shellfish on the menu.
