Im The Merchant werden fast alle Gerichte von Grund auf zubereitet. Chefkoch Matt Foley arbeitete zuvor im Craigie on Main in Cambridge und im Sycamore in Newton. Das The Merchant bietet einen großen Raum, der mehr als ein Jahrhundert lang als Ledergeschäft diente. In der Nähe der Fenster finden Sie hohe Tische, auf der einen Seite des Raumes einen 1,20-m-Tresen und weitere formelle Speisemöglichkeiten auf der anderen Seite. Im hinteren Bereich erwartet Sie ein halb privater Speiseraum. Auf der unteren Ebene lädt ein weiterer Speiseraum zum Verweilen ein. Küchenchef Foley brät das gesamte Fleisch im Haus für Sie. Die Burger sind erstklassig, wie auch andere Gerichte wie Pariser Gnocchi, langsam gebratene Hähnchenbrust und „rustikale“ Desserts. Das The Merchant serviert ebenso Salate, Sandwiches (USD 10-12) und mehr zum Andrang beim Mittagessen. Zum Abendessen erwartet Sie eine Brasserie mit Bedienung (die meisten Hauptgerichte bewegen sich zwischen USD 22 und USD 28). Die Bar bietet 36 Biere vom Fass, von denen viele in der Region gebraut werden, sowie eine umfassende Auswahl an handwerklich zubereiteten Cocktails. Dies wird vor allem die Gäste freuen, die nach der Arbeit hierherkommen.
