Der ursprünglich aus Mexiko-Stadt kommende Küchenchef Fernando Olea, ehemals Küchenchef des Epazote, begeistert seine Gäste seit 1991 in Santa Fe. Küchenchef Olea schafft anspruchsvolle Aromen mit den einheimischen und kulinarischen Traditionen des alten Mexikos zusammen mit Zutaten aus der ganzen Welt. Seine Speisekarte ist bewusst klein gehalten und umfasst frische Produkte sowie Fleisch, wenn möglich aus der Region. Nichts weckt das Geheimnis der mexikanischen Küche mehr als Mole, eine Soße mit komplexen Aromen, die normalerweise geröstete und gemahlene Gewürze, Samen, Nüsse, Schokolade sowie Chili enthält. Viele Mole-Rezepte enthalten mehr als 30 Zutaten und einige Rezepte umfassen alleine 5 Sorten Chili. Küchenchef Olea ist erfreut darüber, seine Mole-Soßen zu servieren. Darunter ist seine "New Mexican Mole", die er kreiert hat, um das 400-jährige Jubiläum von Santa Fe im Jahre 2009 zu feiern. Das große Wandgemälde im Hauptspeisesaal wurde für Küchenchef Olea von Federico Leon De La Vega, einem bekannten Künstler aus Mexiko-Stadt, gemalt und diesem überreicht.
