Marcellin sieht es als seine Pflicht, aus regionalen Zutaten der Saison ein perfekt ausgewogenes Menü zu schaffen. Diese sind seit 2008 mit 3 AA-Rosette Awards ausgezeichnet. Der umfangreiche Weinkeller des Clos Maggiore umfasst mehr als 2.000 Etiketten und wurde in diesem Jahr zusätzlich mit 400 Weinen im niedrigen bis mittleren Preissegment erweitert. Das Restaurant ist stolz darauf, seit 2003 durchgehend vom Wine Spectator mit dem Best of Award of Excellence ausgzseichnet worden zu sein.
