Der ChoLon-Markt, der größte chinesisch geprägte Markt in Saigon, diente Chefkokoch Lon Symensma als Inspiration für die Gerichte im ChoLon Bistro. Auf der Karte stehen inspirierte Interpretationen traditioneller asiatischer Gerichte. "Viele meiner Gerichte sind Abwandlungen klassischer asiatischer Küche" sagt Symensma. "Ich genieße es, meine persönliche Ansicht über die Aromen Asiens zu teilen." Die Karte ist in mehrere Kategorien unterteilt, um es Inen zu ermöglichen, während des Essens viele unterschiedliche Geschmacksrichtungen auszuprobieren und zu teilen. Die Bar und Lounge serviert handgemixte Cocktails, die eigens zur Verfeinerung der Kreationen von Küchenchef Symensma entwickelt wurden.
