Seit mehr als 20 Jahren bringt das Paolo's den Geschmack Italiens nach Kent. Paul Raftis gründete das Restaurant nachdem er in seiner Jugend das Kochen von seiner Mutter Darlene Raftis erlernte. Er genießt die offene Küche und unterhält sich gerne mit seinen Gästen, während er arbeitet. Den Ausspruch "Es riecht so gut hier" hört er immer wieder gerne. Als Marathonläufer ist er der lebende Beweis dafür, dass man italienisch essen und dabei sehr gesund sein kann. In der Tat wurde eine seiner Spezialitäten des Hauses, die "Fettucine Paolo," im Magazin Runner's World vorgestellt. "Es ist eines der Gerichte, die ich ohne Verwendung von Sahne und Butter entwickelt habe." Dabei handelt es sich um ein köstliches Pastagericht mit Olivenöl, Knoblauch, Hühnerbrühe, Balsamico-Essig, getrockneten Tomaten, Artischocken und Hähnchen.
